Vegetable Pulao




Ingredients: 
Basmati rice (1/2 kg, approximately 2 glasses), cottage cheese diced, green peas, carrot, cauliflower, beans, onion diced, green chillies, mint leaves, coriander leaves, garlic paste, ginger paste,ghee, vegetable oil, salt to taste, pepper, 1 bay leaf, cinnamon, cloves, turmeric powder, garam masala powder. Raisins and cashew nuts if available.



Step 1: 
Grind coriander (handful), green chilies (4-5) and mint leaves (10-15) to a paste.

Step 2:
Add 2 tbsp vegetable oil and 1 tbsp ghee into a cooker. Keep it on flame. When the oil is hot enough put in pepper, cloves, cinnamon and a bay leaf. 

Step 3: 
Saute for 1 minute. Add cut onions and the veggies. Saute. Add ginger paste, garlic paste and the coriander-green chilly-mint paste. Saute for 1 minute.

Step 4:
Add rice. Saute for 2 minutes. Add salt, turmeric and garam masala powder. Add 4 glasses of boiling hot water. Stir.



Step 5:
 Close the cooker and cook till 1 whistle. 

Step 6:
After 5 minutes open the cooker and check for the consistency. If the mixture is watery, cook for a couple more minutes. 

Step 7:
Heat ghee in a small pan. Fry sliced onions. Add cashew, raisins and cottage cheese cubes. Add to the pulao and garnish with fresh coriander leaves. 

Step 8:
Serve hot with papad, curd and pickles.
