Ari Payasam (Creamy Rice Pudding)




Ingredients:
Ari (Rice) 2 handfuls, milk 1 liter, almonds, cashew, sugar, cardamom, sago 2 tbsp, clarified butter (ghee) 1 tbsp, raisins.

Step 1:
Boil rice and sago in 1/2 liter water in a cooker. After 2 whistles lower the flame and heat for 10 minutes. Switch off. 

Step 2:
Boil milk and keep on low flame for 15 minutes.

Step 3:
Open the cooker and add the boiled milk. Mix well. Add sugar and cardamom powder. Mix and let cook for 15 minutes.


Step 4:
In a small pan heat ghee and add broken cashew pieces, raisins and cut almonds. Saute for 1 minute and add to the cooker. Mix well. 

Step 5:
Serve hot or chilled.
